Environmental Health Sanitarians conduct food service plan reviews for "proposed" food service establishments. This insures compliance with construction requirements and safe food procedures prior to the food service opening for business. If critical violations are observed during a routine inspection, either the violations are corrected, if possible, immediately or staff returns to re-inspect the food service establishment with no more than a 10-day correction requirement.
During regular inspections there is an emphasis on education of the following:
- Menu review
- Physical inspection of the food service establishment
- Standard operating procedure review (with the person in charge)

To operate a new eating establishment in the State of Michigan it is necessary to submit a Plan Review and applicable fee (see Fee Schedule) to your local health department.
